Corte Sant’Alda has 597 olive trees – some are hundreds of years old, others are a bit “younger”.
All the trees are tended, counted, classified, noted in the organic register and ready to produce an oil of superior quality just like all the agricultural produce of Corte Sant’Alda. Like our grapes and cherries, our olives also grow in accordance with rules of natural agriculture, without forcing and respecting times and rhythms. The harvest – strictly performed by hand – takes place when the olives are perfectly and as quickly as possible. At the end of the day, the harvested olives are taken to the oil mill and, thanks to an agreement signed this year with Daniele and Lorenzo Salvagno, immediately washed and pressed. The decision to work with an external mill and not to use small machinery for oil production in our own premises was debated at considerable length. The features of the mill – continuous, two-stage cycle, vertical mills in a nitrogen atmosphere ar controlled temperature (below 27 C°) and conservation until bottling in tanks under nitrogen pressure – convinced us that our company would never have owned such highly technological machinery ensuring such impressive respect of the quality and characteristics of our olives.
A MULTI-VARIETAL olive oil with expected production of about 1000 bottles, where the different varieties, Lleccino, Pendolino, Frantoio, integrate and reciprocally exalt their specific characteristics.
